Show moreFood availability is a serious problem for some low-income neighborhoods. This study examines food access in Eatonville, Florida, a small town in Orlando, Florida. Eatonville was one of the first African American towns incorporated into the United States after emancipation. It is a low-income community with 25% of the overall population and 30% of children living below the poverty line. This study will examine the state of food availability through food store and resident surveys in hopes of diagnosing need in order to alleviate it. There are serious implications for residents of cities with inadequate access to nutritious, affordable food. Children living with unequal access will face many future disadvantages in education, employment, and health. These compounding problems lead to a cycle of poverty that can be alleviated with appropriate public policy measures and other neighborhood changes that address food access in low-income neighborhoods.

Show moreAlthough studies on food insecurity among low-income families and children are prevalent, it's rare to come upon a study specifically measuring food insecurities among college students. There are limited accesses for students to government assistance such as food stamps because of their "dependency" on their parents. Although, on paper, the student may still be a dependent, there are a myriad of instances where they are unable to receive monetary help from their parents for different circumstances. My current study is examining an understudied population of college students who use the Knights Helping Knights pantry. The Knights Helping Knights pantry is located on the UCF campus and provides food to students in need. In addition, this study measures awareness of the pantry among a sample of college students. There are two sources of data for this study. The first consists of results from pen and paper surveys given to the students who attend the Knights Helping Knights food pantry located on campus. The second consists of results from an online survey of college students measuring their awareness of the pantry and hunger issues in general. The goal of the research is to examine the barriers to asking for help and the experience of stigma among the students who use the pantry in addition to examining the awareness of other students of the pantry's existence and the need for such a resource.

Show moreResearch shows that food insecurity rates and experiences vary by subpopulation. This dissertation examines the rates and experience of food insecurity rates across subpopulationsusing a wide variety of sociodemographic factors expanding the current research on de terminants of food insecurity. Subtopics surrounding the current food insecurity research are explored. These topics include determinants of food deserts, SNAP (or food stamps) utilization, and household adaptation strategies. This research shows that current measurements of food insecurity lack the detail needed to understand why households are food insecure besides lacking income. Using Bourdieu's four forms of capital, this study considers factors beyond income tounderstand the determinants of food insecurity. Quantitative analyses utilize nationally representative data from the 2013 Current Population Survey Food Security Supplement, as well as representative food security data collected for Orange County, FL and state of Florida. Qualitative interviews were conducted to examine adaptation strategies of households with children. This research finds that a number of determinants besides income contribute to household food insecurity and encourages policymakers to move beyond income as the major determinant of food insecurity and consider other household and demographic characteristics as equally important to understanding the problem of food insecurity in the US.

Many packaging labels contain keywords such as "organic," "farm fresh," and "all natural." Some products incorporate the use of images such as a picturesque farm or a "happy" cow. Using data collected from the surveys of 349 college students, this study examines student choices of food products based on organic and non-organic and brand and generic foods. Variables also examined include sex, health, and living arrangements. The results of this study can help provide an understanding about the mindset of the average college student while shopping at the grocery store. Based on the results there is evidence that students are significantly more likely to choose food products that are non-organic and generic. Based on the five variables used, sex and concern for nutritional value were the most significant in predicting a student's purchase of brand and organic food products, while body mass index, frequency of looking at nutritional facts labels, and living arrangement were not significant.

The small amount of research that has been done focuses primarily on mobility issues of the elderly and the disabled, despite findings that income level is an important determinant in access to transportation. The few studies that have examined access to transportation in relation to income simply cite the difficulties that those in poverty face when attempting to access vital resources as problematic, yet very few focus specifically on this issue. This thesis examines how free food recipients commute to and from local pantries, and whether public transportation in the Orlando metropolitan area adequately services food bank resources utilized by low income individuals. Physical location data as well as survey questionnaires were used to determine commuting patterns as well as the overall availability and utilization of transit options of Orlando's low income population. Findings from this study show that even though nearly 50% of respondents do not own a car, public transportation remains a last option, making the Orlando area heavily dependent on cars, even for those with no direct access to one. Despite low public transit ridership, it was found that the majority of food pantries in Orange County are adequately serviced by LYNX, while pantries in Seminole County suffer from a severe lack of services.

Show moreAs obesity levels reach epidemic levels globally, an understanding of the multitude of factors that influence both eating behavior and food choice is necessary. This dissertation attempts to investigate the role of emerging food categories, namely organic foods, and the influence of environmental cues on eating behaviors and choices. This goal is accomplished through three essays. The first essay focuses on the organic food trend and consumer taste expectations. Specifically, this essay explores how the presence of an organic label influences taste expectations differently for minimally processed versus highly processed foods due to the level of consistency (congruency) between the food item and formed organic associations. Moving the focus on food consumption to environmental cues, the second essay of this dissertation investigates how the temperature dimension of ambient scent (i.e., cool or warm) influences food choice and the number of calories consumed. This essay, drawing on literature from physiology and the limited research on the temperature dimension of scent, shows that the temperature dimension of scent generates behaviors that mimic the body's physiological responses to ambient temperature. Lastly, the third essay explores the relationship between organic foods and the discrete emotion of nostalgia. This essay examines how proneness to nostalgia and nostalgia evoked by advertising results in a preference for organic food products. This essay proposes that nostalgia evokes a desire for simplicity that is represented through the traditional production methods used by organic products; this leads to a preference for organic products. In sum, these three essays advance the knowledge on factors that influence food consumption behavior and choice, adding to the theoretical understanding of emerging food trends, labeling, and environmental cues, while providing implications for marketing strategy and consumer well-being.

Show moreThough this work started as a formal academic cultural study, it stretched and squirmed and became not only an examination of the cultures themselves, but how I came to fit within those cultures. By combining my experiences travelling as a child and young adult as well as learning the craft of professional cooking, the essays in this work are highly centered around food and what food means both to me and to cultures throughout the world. The structure and tone of these essays varies greatly from one to the other, all at once casual, almost conversational in one, and pedantic and formal in another. This thesis was designed to grant readers a broad scope of my ability as a writer and cook. The six recipes contained in the collection are meant to move the work along as a meal would, leisurely and savoring moments, but at the same time, there should always be a sense of anticipation about what will appear next. The characters in this thesis came from near and far from France to Lima and each carries a cultural and culinary significance in the work. Each essay ties food to emotion love, distress, bewilderment, intrigue and zeal. The main themes in this work stem from the ingrained nature of values taught at childhood whether we like them or not, the role of food in shaping the cultural clash of peoples and the inherent connective nature of food as common ground.

Show moreThe intent of this research is to examine the relationship of corporate fast food and health within the context of gender. It tests the hypothesis that Western perceptions of masculinity and femininity inform a differentiated pattern of food preference, which will correlate with health as measured by Body Mass Index (BMI). The targeted sample population for the study is the undergraduate community of the University of Central Florida, and fast food is a chosen dietary medium because it is an increasingly ubiquitous source of caloric energy in the American foodscape, representative of the mass production model applied to cuisine in Western nations. Data regarding fast food consumption habits were collected via survey producing a sample size of n=165 (n=116 females, n=49 males). Statistical analysis applied to this data yields conflicting results. While no gender based food preference is demonstrated, a correlation between BMI and frequency of consumption can be established. This suggests a gender-differentiated preference for fast food in general, if not for specific food items. From this sample, respondents were interviewed (n=14 females, n=8 males). Analysis of these interviews reveals an acute awareness by females of the connection between diet and health that is not reflected by males. Whether this perceived difference is based on an actual disparity of health education or a willingness to express this knowledge, it indicates a discrepancy which is likely attributable to cultural influences. While this study does not reveal gender-based differences in perception of specific foods, it does suggest disproportionate consumption patterns within genders which reflect distinct and contrasting cultural expectations in the U.S.

Show moreGourmet food trucks have emerged as increasingly popular dining alternatives for consumers in today's urban landscape. Existing literature, as well as my own ethnographic research within Orlando, Florida's mobile food vending scene, reveals that food truck owner/operators utilize various strategies to establish a viable niche for themselves in this diversified and burgeoning market. Among other things, these strategies include online social networking, creating and maintaining a recognizable brand identity, collaborating with local retailers and bar owners, and incorporating organic and locally produced ingredients in their dishes whenever possible. As in other parts of the country, there appears to be a growing concern in greater Orlando about local diets and the profound and subtle messages it conveys about contemporary eating habits. I contend that dining at gourmet food trucks represents a legitimate declaration of consumer identity about individual beliefs and values. In my thesis, I examine how Orlando's gourmet food trucks offer consumers a greater selection of food options and allow locals to participate in a viable social network and community.

Data from the Institute for Social and Behavioral Sciences at the University of Central Florida were utilized to analyze 3 main questions: In which community is food insecurity more prevalent? To what extent are food consumption, transportation, poverty, and unemployment associated with food insecurity? Does the association between food consumption, transportation, poverty, unemployment, and food insecurity remain when controlling for self-reported overall health, education, marital status, and race. The results revealed differences in predictors of food insecurities. Particularly, there was a positive relationship between food consumption and the knowledge of recommended number of servings of fruits and vegetables suggesting that those who have nutritional knowledge practice healthy dietary behaviors. Furthermore, structural dysfunctions and affordability pose food consumption limitations on the communities studied (mainly Eatonville).

Show moreThis thesis considers Central FloridaÃÂ's emerging local food movement from an anthropological perspective. Area farmers and organizations spearheading this movement and the benefits of purchasing and consuming locally grown food are ethnographically explored. Interviews with natural and organic farmers highlight the challenges affected farmers face in creating a sustainable local food movement in the greater Orlando region. Their motivations for farming organically and the counter-hegemonic tendencies inherent in this mode of cultivating are critically analyzed. Taken as a whole, this work addresses the limitations and opportunities afforded to farmers amid the popularity of local food consumption as a social movement. The farmers interviewed for this project are new to producing food for local consumption. They all share an interest in promoting financial and environmental sustainability for small farms. Key challenges they face include those grounded in access to arable land and agricultural policies that disproportionately favor large-scale producers. This research has significant implications for both those organizations and individuals building sustainable local food movements and those in local, state, and national government developing agricultural policy.

Show moreEnergy and water are consumed or contaminated during both the production and disposal of wasted food. To date, evaluations of water and energy resources associated with food waste have considered only resources used in food production. To allow for the full characterization of food waste within a Food Energy Water (FEW) nexus framework, this study addresses a fundamental knowledge gap related to the energy and water impacts of food waste after disposal. Fluxes of water and energy related to disposal of wasted food in landfills within the state of Florida were characterized. It is estimated that each metric ton (Mg) of landfilled food waste produces 18.1 kWh of energy, while the energy needed for collection, leachate transport, and treatment totals 126.5 kWh/Mg. These values equate to a net energy cost of 108.4 kWh/Mg, which is 110 Million kWh annually in Florida. It was observed that the water footprint of landfilled food waste is related to the assimilation of contaminated effluent and ranges from 2.5 to 58.5 m3 per metric ton of landfilled food waste, depending on the constituent of interest. Up to 58 Million m3 of water may be required annually to assimilate contamination related to landfilled food waste in Florida. We assessed the sensitivity of 14 variables used to estimate energy and water impacts and found that impacts are sensitive to the proportion of landfills collecting and utilizing landfill gas, concentration of constituents in leachate, and volume of effluent. Future research should be focused to improving the characterization of these influential parameters, and to similar FEW analysis of other food waste management technologies, such as composting or anaerobic digestion. Better understanding of water and energy impacts of food waste could inform societal decision making regarding investment in FEW-efficient waste management technologies.

Show moreRecently, research on community gardens and their benefits to health and community has become very popular. However, this influx of research has failed to investigate challenges to successful community gardening. Some articles examine issues between community gardeners and the land owners, but other than these conflicts community garden challenges, like lack of participation and quality leadership, have not been discussed in the literature (Draper and Freedman, 2010). To allow future gardens to be as successful as possible it is important to identify potential obstacles. Additionally, it is just as important to continue to examine possible benefits, for example, physical activity and health benefits of community gardening and the breadth of community issues possibly addressed by community gardeners. Continuing to research on community will allow for more successful gardens and encourage funding for these programs. This study examines how food insecurity, health and community cohesion issues can be affected by community gardens in Central Florida. It also investigates challenges community gardens often face. To do this I conducted structured interviews with community gardeners and semi-structured interviews with community garden leaders at several gardens throughout Orange County, Florida. The results show that community gardens have several benefits including increased consumption of fresh produce, improved physical activity, mental health and community cohesion. However, gardens are not without difficulties. About a third of the gardeners and the majority of the leaders said that lack of participation was a challenge they faced.

This model was developed to estimate necessary food intake of gray whales, Eschrichtius robustus, of the Eastern North Pacific stock. Field Metabolic Rates (FMR) for gray whales were first estimated based on various assumptions (e.g. volumetric representation of gray whales, extent of their feeding season, and blubber depth distribution) using morphometric data, energetic costs, and food assimilation according to age and gender specific requirements. Food intake rates for gray whales of varying maturity and gender were then estimated based on FMR and caloric value of prey and compared to food intake rates of previous studies. Monte Carlo simulations and sensitivity analysis were performed to assess the model's predictions compared to observed field data from previous studies. Predicted average food intakes for adult male, pregnant/ lactating female, and immature whales were 475 ± 300, 525 ± 300 and 600 ± 300 kg d-1. Estimated blubber depths resulting from these food intakes were comparable to field data obtained from whaling data. Sensitivity analysis indicated food intake, from all parameters, as having the highest impact on the percent change in ending mass from a simulation. These food intake estimates are similar to those found in a previous study and fall within the range of food intake per body mass observed in other species of cetaceans. Though thermoregulation can be a factor in some cetaceans, it appears not to be an additional cost for gray whales as the present model's predicted lower critical temperatures for the whales (TLC) were below ambient temperatures. With temperatures increasing in the Bering Sea, the main prey of gray whales, ampeliscid amphipods, could be adversely affected, possibly resulting in increased food shortages leading to a surge in gray whale strandings.

Show moreThe purpose of this study was to examine teacher perception of student school meal preferences in an elementary school setting. This was a cross-sectional mixed-methods study that is part of a larger study to develop a nutrition education program for elementary school children. Focus groups and surveys were administered to faculty at a charter school in downtown Orlando to gain insight into the types of food offered at school and student response to these food items. All members of the faculty were invited to participate in the study, and seven teachers volunteered to take part in this study. Focus groups were recorded using tape recorders; they were then transcribed verbatim and coded independently by two research assistants. Results of this study showed that according to members of faculty, overall, the food served in school during breakfast and lunch is of poor quality. Portion sizes were acceptable according to participants, however, there is still too much food is being wasted. The students do not respond well to breakfast or lunch, which has adversely affected the academic performance of students as well as their classroom behavior due to hunger and low energy levels. It was also noted that older children expressed interest in learning about topics pertaining to nutrition. This study is the first stage of a larger initiative to develop nutrition education programs and to encourage conversation regarding school meal reform, especially as it pertains to those individuals of low socioeconomic status. The implications for this study could be beneficial for a wide-range of children who attend school on a daily basis.

In doing so, they contribute significantly to the emergence of new ideological apparatuses appropriate for a global community. These apparatuses (-) including the formation of a posthumanist subject, the use of technology to support embodied cognition, and the establishment of entertainment as an ideological institution (-) have become the harbingers of a rhetorical evolution. Based on the work of Gregory Ulmer, along with Jacques Derrida, N. Katherine Hayles, Donna Haraway, and Cary Wolfe, this evolution expands the work of Plato and Aristotle by overcoming the privileging of mind over body and abstract reasoning over concrete physical experience.As such hierarchies become turned on their heads, a renewed emphasis on materiality and embodiment demands virtual products that stimulate the body. As such, a phenomenon I have named disembodied consumption takes place whereby users' chemical senses can be incited through participation with digital technologies. Through the stimulation of these physical senses, and in turn the connected emotions, today's digital citizens are practicing the rhetorical method referred to by Ulmer as conduction.By examining sites, blogs, and postings that include references to food and flavor, I reveal examples of conduction and show how this method is necessary for the development of well-being, and the defeat of compassion fatigue in digital society.

Due to lack of funding to the program, Meals on Wheels by Seniors First is unable to give meals to seniors in the Central Florida area who are food insecure. Through structured face-to-face interviews, this study examines elders on the program's waiting list and explores how this population obtains food if they are not being served through the program. Findings suggest that seniors on the waiting list are in need of the resource for survival, not convenience. This study has strong implications in which additional funding is needed as the Baby Boomer population ages and the need for food programs increases.

With over 40% of the approximately 73 million children (ages 0-17) participating in the National School Lunch Program (NSLP), public school lunches carry resounding nutritional, social, and educational significance for their consumers. This fact, coupled with frequent media attention to school lunch food, notwithstanding, a notable lack of social scientific engagement with both students' perspectives and NSLP operators persists. Divided into two studies, this research utilizes ethnographic methods to explore students' lunchtime experiences within a Central Florida public elementary school cafeteria. Both works are grounded in information collected from 22 semi-structured and unstructured interviews with students, parents, cafeteria workers, school faculty, and a county official while also participating in a one-month lunchtime observation period in Spring 2017. The first study utilizes ethnographic methods to investigate students' food selection, social practices, and mealtime behaviors within the cafeteria. In this work, I argue that student's preferences are most often informed by taste and familiarity, though both age and personal belief systems strongly outline students' experiences. In the second study, I focus on the top-down priorities of nutrition, food production, and student feedback that guide how institutions construct lunch menus for elementary students. Specifically, I investigate what role public institutions play in forming elementary school students' understandings of food and expectations for mealtimes. Synthesizing findings from both studies, I assess how social, economic, and industry pressures are tangible within local cafeteria and governmental contexts. This research contributes to academic scholarship and public policy regarding childhood nutrition in institutionalized settings and advocates for the inclusion of elementary-aged children as important social actors in their call for increased and dietarily-inclusive food options.

Drawing from symbolic interaction and standpoint theory frameworks, this research focuses on how gender, race, and nationality influence work experiences and family life for women in comparison to men in the meat industry. This study is based on 15 in-depth interviews with men and women who work in management positions and in the processing rooms of meat companies where non-human animals are disassembled in the production of food. Data collection and analysis were performed using grounded theory methods of inquiry. Participants' stories highlight women's experience in adapting to the organizational culture of the meat industry, strategies of survival in everyday life in the organization, and the conflict between work and family. While women in management positions discuss the process of fitting into the male-dominated organizational culture, women in the processing room experience gender segregation and inequality that prevents moving into the men's world of processing management, a separation that is built into the structure of the facility. This study contributes to the literature on work in the meat industry as well as the sociological research on gender and work, race and ethnicity studies and research on the family.
